As a bird substitute, we've done a normal fed chicken- not a grocery one; and a muskovy duck.

The chicken was more like a modern turkey in terms of taste, but it has the same cooking risk as a turkey.

The duck was a shocker- that specific kind of duck was far more like a beef standing rib than any other poultry.  Not a cheap bird if you can find one, but holy cow, was an amazing dinner that was.

But eat what you want.  For me, my mom's standing rib would be pretty awesome- but she would almost always do that for Xmas dinner.

Something that makes you feel special for a special day.

One of Mrs Monohue's friends is a gentleman farmer type. One year we got one of his chickens. It was about a four-pounder, IIRC, and by all accounts the most flavorful chicken we have ever had. Cooked up tender and juicy and GBD, just like on the television. Well worth the twenty bucks.

We sometimes switch it up in my family.  This year was traditional.  Last year was seafood.  The year before, I smoked a Brisket

My local butcher is retiring and sold his shop, he cut a roast called a Rockefeller Roast.  OMG, cut it with a fork!

It was purchased and Monday I go up and ask....

We had turkey, but not traditional turkey.   Instead of the whole bird, my wife picked up a turkey breast.  No left over bones, no carcass.  And enough turkey leftovers for one sandwich.

I spatchcocked a brined turkey, cooks more thoroughly without drying out.  Squash, a nice dressing with cranberries in it, a good day.

Friday I made soup using broth I made from the turkey and a box of Thai, soy, ginger flavored broth.  Some carrot slivers, turkey meat, mushrooms and Ramen noodles did it off.
