I have recently found Allen Millyards channel and am blown away. The Kawasaki ZR1 modification to a 6 cyl is amazing for a man in a shed. Yes he has a few big machines but it is primarily hacksaw, file and welder type work.

SOUP Classic Motoring: This guy does amazing stop motion video of the complete disassembly and restoration of a couple of his cars. He started with a Range Rover Classic Vogue and is working on an Esprit and W123 Benz. I'm a bit behind, so he may have moved on, but the vids are great.
Fingerprints Workshop: This dude is doing an awesome job restoring a very neglected Fiero. I don't generally care about Fieros, but his humor, high production quality, and insistence on doing all of the work himself makes this an excellent series to watch and enjoy.l

Rightfully so! As much as I don't care about a viper engined bike, the engineering behind adding cylinders to existing engines is fascinating

I'd say he's a legend worldwide. 
I've been following his exploits for probably 20 years now in the motorcycling media.
Donn DIY - I've been seeing his videos pop up off and on for a while and I finally subscribed, I think lots of you would enjoy the content too. Cool homebuilt machinery and vehicles, lots of fabrication with no talking and very little of him pointing the camera at his own face. Almost like welding and grinding ASMR.
Aside from GRM, I like Alex on Autos. He's got a pretty unbiased look at new cars. Ryan at Driving Sports has upped his game as well.

This person has a channel of motorcycle and car stuff, but I'm really into the POV Caterham drives through the Japanese countryside. Above, the driver meets up with someone in a Mitsuoka Zero1 and they just putt about. None of it is lairy driving or anything. It's just relaxing to see someone out for a good drive.
