I have a Tascam US-122 I've had for forever. So long, in fact, that it's been deprecated several times, and there's no Windows 10 driver. (The driver in this case actually contains a significant amount of what runs on the interface itself, as an aside; I learned more about this when I was running it under Linux, but I'm not messing with that right now...)
It's easy button time. Ten plus years was a good run. I probably won't record more than one input at a time. Or maybe I'll go nuts and record guitar and vox simultaneously. Just running into Audacity, trying to do some song sketches, capture ideas...
I just want something easy and reliable.
What are people using and liking? And yes, I'm a little okay with being talked into other/better/more gear if it gets you excited 
Aside from downloading mixing software for friends who wanted to be rappers, I don't have much experience.
BUT I will say you can get a Rocksmith USB to Guitar cable for fairly cheap.
$30 on Amazon
Might be hard to read on your screen, but it does say "can be used as a general purpose audio interface"
I don't know how good it does at recording, but Rocksmith will accept Win10 drivers, so I'd guess it could work with a different program like Sony Acid Burn or whatever it's called.
Hey, I stumbled onto a how-to to use Windows 10's compatibility mode stuff to run the Vista drivers! My US-122 is working! I haven't tried to actually do anything, so hopefully the adaptation doesn't make it all latency-riddled or anything...

I'd see what Sweetwater, or your favorite music retailer, have on sale. I happened to be in a Guitar Center a few years ago & picked up one for well under $50(it think it was $35?). I'd have to check the brand, but I think it's a Berhinger. It's worked fine on my Mac the little I've used it.
