So my wife any vacationed last year in Mexico at a inclusive resort and had a blast. looking for some ideas, we liked inclusive resorts. We have a limited budget of $3k for food, transportation,flight, for everything. Any ideas? I went to AAA they were pretty much worthless. The dates are what make it expensive and hard to get, but it is only time we both can vacation.

That's true but do NOT gamble there. The odds are horrific compared to Vegas.
Your best bets are either Mexico or Cuba for bargains. Christmas isn't cheap like it used to be.
Before anybody says it - yes US folks can get to Cuba - via Toronto or Montreal!
