Well, I can't actually complain about missing anything, because I started driving in 2001ish, so the only thing I miss really is less traffic. Every day, more drivers are added to the road, at a faster rate than they leave, I'm sure. And that's bad.
Non-power brakes, especially on sports cars and sporty cars. Miatas are light; who needs power brakes? I want the excellent ability to modulate with good feel.

One more thing I miss. Cars without cupholders! At what point in human evolution did we decide we constantly need some form of fluid intake? Granted I rarely take road trips longer than 4 hours but I can't think of the last time I used one.

Umm... pretty much since the beginning of it.
Driving home from work tonight the weather was perfect and I had the 90s channel on when I realized I was missing something. Not the quirks of a poorly rebuilt Quadrabog or the occasional slip from a tranny with far to many hard launches. I was missing fun. Getting in a freshly waxed car, picking up some friends and cruising around. A bit of bass and the burble of a new set of Flowmasters just off idle, while talking to a couple girls in a Mustang next to you at lights. Heading out to a deserted industrial area to see if the fast guys were as fast as they say, and at the end of the night meeting up at a diner for breakfast because now that the sun's coming there's no point going home before work.

Antennas for some reason. I also get a chuckle when I see a car with a huge metal antenna now.
While I am sick to death of the sound of Harleys with their life-saving loud pipes, I miss the sound of old straight pipe Triumphs. That's what a chopper is supposed to sound like.

Hah, I was thinking the other day that I really like the look of my Miata with the antenna up. Too bad I never use the radio in that car.
I have no problem with safety features that can be switched off at the track or for a burnout and/or don't do anything until I'm about to die. I do miss skinny A/B/C pillars, though. The visibility out of my E28 made it feel like driving around in the popemobile.
Mostly I miss NVH. Any modern car with all the bushings swapped out for something harder to transmit all that nasty feeling back to the driver would probably instantly drive 10x better.
Affordable RWD cars that are "fun" to drive.
I'll agree with the NVH. No NVH feedback to the driver makes them do stupid things when they shouldn't.
I just realized today that I miss analog tuner radios. Digital is great, but you can't fine tune them like you can an analog. I hate being in my work van and losing my radio station sitting in a parking lot somewhere and I have to move my van 5 feet to get it to pick the station back up.
Interesting that my daily driver, which is ~16 years old has many of the things people miss:
Crank windows 4 seats/doors, <2500lb curb weight No cupholders A,B,C pillars the size of a pencil - driving a fishbowl.

The thing I seriously miss: 80s/early 90s Jap control layouts. My Z32 had a fantastic layout. Everything was right there, within 2 inches of your hands. A lot of modern cars have the controls spread all over the damn place. I don't like it. My S2000 is close to this, but doesn't quite cut it.
On a related note, those of you that miss manual steering, do you miss an ungodly high steering ratio? 95% of cars with manual racks have a terrible ratio. Miatas included.

I'm old enough to remember manual windows and dig wing windows, only car we had with em was a minivan though... I miss $.99 premium hahaha
what's NVH?
Real station wagons. Not a "crossover' but a sedan that they added a couple more feet of roof and a tail gate. Simple.
