Everyone always overlooks the Mazda MPV. Probably because the first gens sucked.
But please don't overlook the 2nd gens (1999- 2006). By far the best bang for the buck in mini vans in my humble and accurate opinion which I highly trust.
There are 7 on ebay right now, all in your price range.

We intended to buy a Mazda5, but the MPV is simply a better people mover. When we saw them side by side on the lot and drove them, we knew which one we needed for our family.
I like the 5 better, because I still want to "pretend" I'm driving something sporty. But there is NO WAY you can fit the cargo in one to accommodate the needs of 6 passengers if you fill the seats, and the access in and out is pretty tight.
I'm a little taller than your wife, and I have comfortably ridden in all 7 seats. It's got as much cargo space as your 'burb. Plus things you don't think of (like operable windows in both sliders on both sides of the car, flush folding rear seat, radio and cruise convenience controls on the steering wheel, rear control for AC, a 2nd row seat that slides to the side for access, and something like 13 cupholders) all make it a well thought out car. It's bigger than a 7, but smaller than most minivans- it can still manage to handle much better than the average breadbox.
With one baby, you don't have to have it. But in a couple of years, with baby a little bigger and perhaps another lil' tike along, you'll thank me.

Not sure if you can find one for $7000, it may be a touch more, but take a look at an '06 Kia Sedona.
Tons of room for people and cargo. We've got 3 little kids and we can pack everyone in comfortably and have lots of room behind the 3rd row seats. Tons of standard features...3 zone climate control, stability control, 6 airbags, etc... Great reliability. It ain't much of a corner carver, weighing in around 4500lbs, but its' got something like 260hp, so it can smoke the tires from any stoplight.
I'd echo others comments about taking a serious look at a minivan, especially if you're planning on having any more children. After our second child we bought a CPO Odyssey and love it. My only regret is not buying one sooner. They're not awful to drive, get decent mileage (especially when compared with a 454), and have a ton of room. We're pleased with ours, but I'd look at several different brands/models to see what fits you best.
