Strawberry rhubarb is royalty. Not quite key lime royalty but royalty nonetheless.
Rhubarb is an excellent carrier of sugar. Stewed rhubarb is delicious.

Rhubard tends to be acidic, I think that's where the the magic is in my Mom's recipe with custard and strawberry. The custard balances things out. And yes, it's probably a "grown up with it" weirdo taste thing.

As a reminder, 25 responses possible. So 3 more to possibly turn the pies.
I regret that I did not realize the 25 response limit before starting this but you get what you pay for, and I/we have paid nothing.
Mrs. VCH makes a Key Lime pie with chocolate ganache. I proposed to her on Key West at sunrise, and our first pie together as an engaged couple was key lime with chocolate ganache. She found a recipe for it, and makes it every year on our engagement anniversary. Along with corned beef, cabbage, and potatoes, because the anniversary of our engagement is also on St. Patrick's Day.
Cherry pie is a very close second. My birthday is right at the peak of sour cherry season, and every year for my entire life Mom VCH would make me a cherry pie for my birthday.
All the other pies are delicious in their own right, and wouldn't kick any of them out of bed (in fact, we did not have wedding cake at our reception, we had a half dozen different kinds of pies!), but Key Lime with Chocolate Ganache and Cherry are my top two.
