I'm up in Flagstaff, but most of my Phoenix trips involve In n Out, Fogo de Chao, and other restaurants. Apparently I have an eating problem :-)
If you're in town this weekend, Overland Expo is going on up in Flagstaff. Other than that, I would spent some time walking around Mill Avenue at night. If you have time, you could take a drive to Sedona, Globe, etc and check out some of the scenery.
I'll be coming through Phoenix (if things work out with the seller) on Sat with a new to me NB Miata, if you're around!

I am in South Tempe. If you don't go up to the Expo tomorrow, Sat night at the Pavillions is the longest running car show. Depending on your age, Old Town Scottsdale has a big bar scene that goes Thur - Sun. Several day drinking spots and day pool clubs if you like.
I am old and do not have much else for must does. Hole in the rock is a good spot to watch the sunset in North Tempe, 3 minute hike https://www.alltrails.com/trail/us/arizona/hole-in-the-rock-trail

Then I went to the Commemorative Air Force Combat Avation History Museum. It was quite impressive. One of their volunteers is a 95yr old WWII veteran who drives a gen 1 Viper.
I tried to go to one more car collection but it is not open to the public and only for events. The G Collection.

A few days late, but if you have to go back.....
Just south of Tempe is the Local Motors https://localmotors.com/tempe/ factory. I would see if they have any interesting Rally Fighter stuff happening there. That's also really close to Wild Horse Pass Motorsports park, you could see if anything is happening there as well. There are also a good number of good breweries in the area if you are into that.
My good friend has a place you should check out for breakfast/lunch, but it will be crowded over the weekend.
