I'll be out there for he SEMA event this week. My day time hours are pretty well booked.
I've been to Vegas once before.
What should I do to occupy my evening hours?
Gambling isn't my bag, other than throwing a few coins into slots randomly.
I'm married and have no need for any of the "adult" entertainment options that Vegas has to offer.
Most free time is from dinner afterwards.
What to do with in reasonable distance of the strip. Are there decent karting options?
Food?....I'm not a 5 star restaurant type of guy, but do enjoy good food that doesn't require I wear a collar and tie.
I'd rather not spend a million dollars, but willing to spend some money if it involves going fast.
So basically, what is the tame fun stuff, a cheap SOB like me can enjoy?

Rent a car for the day and go to Hoover dam.

Been there....but that wouldn't be an option. I'm working from morning until around dinner time daily. Can't dedicate a whole day for the activity. Off time only.
Need to stay close to the strip in case duty calls as well.

I like the arcades. They've spent big money to keep kids entertained, works well for me. You can always rent a something and cruise- though most of them are heavily speed limited. I know there's track days where you can drive Ferraris and McLarens and whatnot down at LV Motor Speedway- but I think it's the opposite of GRM priced. Foodwise- I was actually really impressed with the offerings in Ceasars food court like area. Wasn't terribly expensive IIRC. There's always the free shows at the Mirage, Treasure Island, the Bellagio, and so on down the line. Fremont street may be more your speed pricewise, instead of some of the high end mega casinos down at the south end. Almost everything is available at a discount if you look around.... don't be afraid to ask the hotel staff what the move is for the day and where you can get hooked up. Flip em a couple bucks and they might have the inside line on something for you.
Las Vegas speedway has rides in a drift Z06 for $100 I believe. 2 laps around the track.

We did this for my brother in law that lives out there.
any craft brews that are must haves? A good IPA can make my day.

I'm not a big gun guy, but that might be a good possibility. Thank you. I enjoy shooting, but haven't really done it much since college(20 years ago).

One person with me likes craft root beer as much as I like craft beer. Place seems to have both.
I'm not a gambler myself, and I don't drink, but I still have had a great time whenver I went to Vegas. Each of the large casinos have free attractions. That could take you all night just to check all those out. You could take a cab over to old Vegas and check out the Freemont Street Experience. The Imperial Palace has a nice antique car collection. I'm not a fancy restaurant guy myself, so don't have much recommendations there. We always went to the buffets, which were really good. Only other restaurant we went to was the French cafe in Paris and the steakhouse in Bellagio....that was expensive, but it was a one time thing.
Have dinner at LOS (Lotus Of Siam) off the strip. It's a great place to eat.

Global Rallycross event is Thursday night on the strip. I think it's a Wednesday/Thursday thing with what is supposed to be good access into the paddock area.

I'll second the Imperial Palace car collection, was like $10 to get in and they had maybe 60ish cars when I was there. Old Vegas was fun too, they've got lots of street performers and a maybe 3 block area covered with an LED screen top thing that does a light show every 15-20 min.

Yep, should be fun. I'm on one of the teams....that is my day time work obligation.
So by all means come on by and say hi(Subaru/Puma).
It's in the lot next to the Tropicanna and across from the Luxor.
I'm in the airport now leaving Vegas after ten days. Don't drink much and don't gamble either and still plenty to do. Also encountered one if those camaro based trans ams. It wouldn't start and I helped push it in the truck!

Yes. That's the Imperial Palace collection. The casino's apparently been renamed since I was there a couple years ago.
Worth it even paying admission. Very eclectic collection.

This is what came to mind for me...I wouldn't say it's so expensive that it's not worth considering, but it's not exactly cheap either.

I have it as a maybe. I'd like to do it, but scheduling is likely an issue.
