Were in a hotel on the beach and its not great beach weather. Any suggestions for what to do to keep the kids entertained and possibly even make this a memorable trip?

Tomoka State Park is a nice place 5 minutes away. It has ruins, a museum, and canoe rental on the calm Tomoka river. It's a great place for a picnik or fishing.
I'm planning on building a rail gun with some friends in Samsula today, but that doesn't sound like a baby-friendly activity.
Blue springs is about 45 minutes away and also awesome/ baby friendly. See some manatees!
Silver Springs is 30 minutes away and also awesome, you can get breakfast at a zillion-year-old sugar mill, too. You cook your own pancakes in the middle of the table. Also there are boats to ride on or rent.
I'd probably do silver springs if I was in your position. Not too much walking and safe for the little ones. Bring swimsuits, you can swim in the springs.
Oh, and if you see a red Trooper driving around with GRM stickers on the side, it's me. Small world, huh?
It was 90 degrees in Gainesville when we left so todays high of 73 and constant 20mph winds are going to limit our water activities somewhat. LOL-to all you Northerners: hush! Any suggestions for stuff not involving water?
BTW-If you see a silver bugeye WRX wagon with a GRM die cut on the rear side window driving around like a tourist that's us!
Daytona Beach's Museum of Arts and Sciences MOAS has a great kid zone, a nice sloth skeleton and a planetarium. Was one of our go-tos at that age.
Or you can go south to Ponce Inlet and check out the Marine Science Center? There's also a first-quality lighthouse (and museum) down there that you can climb to the top of, lots of dune walks, sheltered beach and picnic areas.

I did that once and that was how nails ended up imbedded in the wall at the dorms...

Thanks for the ideas-You guys rock! The sun is out in full force so we are going to get to put swim shirts on an go turn the kids blue.

I was referring to the fact that I knew they would end up where they are right now after a couple of hours outside in the ocean and pool: sitting at the table in the room having a snack while dressed in jackets and long pants and shivering with blue lips.
