I'll be taking a class at Cal Poly Pomona next week for work. Having never been to the area, what should I consider doing with my evenings? Class ends at 3:30 and I'll have a rental car.

As much as I'd like to it's not going to happen.
The worst part is that such a thought never even crossed my mind.
Not sure what the schedule is for Irwindale, or if you are there over the weekend, but the track isnt far from you. Its always a good time. Just take the 10 to the 210, should be on the left off the highway next to a Miller Lite brewery.
Anaheim is south. You can go to DisneyLand, just to say you've gone.
Buena Park has Knotts Berry Farm, another amusement park.
You can go to Newport Beach. Very trendy. Take the 57 to the 5, to the 55. Runs straight into the beach.
I'll try to think of some more...
find "glendora ridge road" and drive it. a bunch of times. put some air in your tires first. i shagged my rental mercilessly on that road, and it was good.
it's a little west of Mt Baldy, so is only a few miles from pomona.

Or head up a bit further to the 2 (angeles crest) there are a million fun canyon roads out there...rental car will not attract attention like all the bikes and hondas, let them act as CHP bait for you, and if you get stopped just act lost (ask me how, got out of a huge ticket by playing dumb and lost in a rental Focus that I was driving like a rental should be driven)

if there was a way to cost effectively transport cars cross country, I could load up the east coast
so many nice cars killed by smog test woes....or ridiculous dmv fees
Went to the Justice Bros. facility (J-B Additives),a few years ago. Elder Mr. Justice showed us around. Lots of Offenhauser (sp?) engines; old Indy cars; and a supposedly real GT40 that I got to sit in; etc. On old Rt. 66
Friday nights at the Big Boy in Burbank. Great drive-in show.
Sunset Blvd all the way to the coast. When you cross the hill and can see the ocean, you're three curves away from the dead man's curve. Angeles Crest highway from Flintridge to Sunland is a neat drive. Mulholland Dr would be the way to come back.
Pink's hot dogs is neat. Colorado Blvd in Pasadena (and the old bridge that crosses west) was the inspiration for "little old lady from pasadena."
