I have no direct experience with it but if you want to test it come join us in the (unofficial) GRM Assetto Corsa group.
Whenever your connection lags or disconnects it may cause major race issues because you'll ghost out for a period of time on the server.
you can run iRacing reliably on a DSL connction, i ran iRacing with 38 megabit down and 10 up for over a year.
stability is king..

A friend in my iRacing league was on Starlink and didn't have any issues with lag.
Also curious of the results. A friend got starlink for their RV that we use for autocross travel and we've been trying to figure out if we could game on it. The one time we used it the latency seemed consistent but it's hard to tell how well it really works until you put a consistent load on it. I'd guess it's probably going to be situation dependant, how good and consistent of a signal you get it that particular location, that particular day, etc. I'm not sure I'd want to try official races where dropping connection can kill your irating and safety rating, but for league/hosted races with no consequence it's probably worth trying. Also worth noting that you don't need internet to do test drive sessions. So even if the connection can't sustain races you can still practice on your own.
