On my buddies xs500 the oil filter is discontinued, and nobody seems to make an aftermarket piece. Would it be ok to go to Autozone and find an auto oil filter that fits? Is it an issue if the filter is a slightly different size?

K&N-138 is the world most popular filter it fits 90% of suzuki's that use spin on filters.

Wix and Baldwin will both custom make filters for any application at no cost to you. BTDT with them. Not that you apparently need it, but it's nice to know.
