I'd like my new SV650's exhaust to be slightly louder. Keyword: slightly. None of the brands I look at have anything in the way of actual decibel readings, and I can't find any hard reviews to find out the same.
Where's the best place to start looking for a not-too-loud exhaust replacement?
Avoid anything that says "D&D" or GP style.
I have a D&D pipe and it's deafening.
Jardon has been recommended to me a few times.
Electric drill. Poke a hole in your existing baffle and see if you like the louder sound. If you don't, run a screw into the hole to close it back up.

Jardine does make some decent sounding exhausts that are not too loud and aren't very expensive either. The new Apex stuff from FMF is really interesting and might be worth a look, but I couldn't find a video of anyone running one on an SV650.
I had a Yosh on my SV race bike that sounded great.
Look for pipes with removable DB inserts. I have those on my bike now and it makes a huge difference between in and out. It removes with a single set screw.

That sounds like the direction I'd like to go. With the insert in are they actually reasonable though, or just two shades of loud?

on my 09 ZX-6R. It sounds great, comes with a removeable silencer. Lounder than stock but not by a huge amount.
I just put a yoshimura on my buddies sfv650, same motor as the sv, and with the baffle in its actually not too much louder than stock, it sounds a lot better though. On the other hand, I have yoshimura rs3's on my rc51 and they are pretty loud, no baffles though.
I'm curious about this as well. I have a 400cc Bandit with a full Vance & Hines system that will make your ears bleed (not good)......but on the plus side, it sounds like an IndyCar. It really needs a dB reduction, badly. I'm wondering if a Yoshimura RS-3 w/insert would slip on in place of the V&H muffler (keeping the V&H header/midpipe) and makes things a little more tolerable. Looking at their website:

The only difference I see is 18" vs. 20", does the pipe inlet diameter not matter for a slip on? Or do they just not have an online configurator?
how old is your Vance & Hines? May just need to re-pack it.

Just re-packed this season, unfortunately. That's what I was hoping too
does anyone in the aftermarket make a baffled muffler, similar to stock, that flow some more and aren't nearly as loud as true aftermarket straight through exhaust? I'd really like to find a megaphone style pipe that didn't require repacking and was slightly louder than stock pipe so I can give my nighthawk a bit more growl. maybe a used stock muffler from a Sportster or something?
The key here will be to buy something with a removable baffle as others have said so you can control the sound. Motorcycle aftermarket exhausts are generally loud. The ones with baffles at least allow you to make them not-so-loud.

Oh don't get me wrong I love how it sounds, probably the nicest sounding mechanical thing I've eer owned, it is loud though
