If you want to race a "big " car stock car racing parts make sense.  Massively bigger market and well developed and durable tends to provide High quality. Low cost. 
      I use a lot of that stuff on my race cars. 
    If you're going to make a tube frame car. For speed and ease of construction use smallish square tube. Jaguar "D " type and XKE  did and towards the end Trans Am tube frame cars did as well.  
 The big advantage is greater surface area.  Jaguar brazed everything rather than welded it and they carried a big heavy engine and we're still able to pass the Federal Government crash test. 
     Cutting a fish mouth for a round tube frame is a slow process prone to errors.  Plus the only welding surface is the end of the tube. Square tube is simply a matter of measure and figure the angle.  Most joints are on top/ bottom of the tube. Easy to form triangles.

If by "stock car" you mean NASCAR, no. Outside of a Miata, nothing modern has brakes that will fit inside a 15" wheel.

Oops?  Do you mean a 12 inch rotor won't fit inside a 15 inch wheel?  Hmmm Jaguar, MG, VW bug, BMW, Mercedes Benz,  hmm maybe a few others use 15 inch wheels or bigger?

None of them have MODERN cars that fit 15" wheels. There is no modern MG or VW bug in existence. Also, there is more to brakes than the brake rotor.

That was a couple of decades ago. Don't forget, everyone, 1980 was 41 years ago.
